Redbo's beef stew - bo kho is just one of those dish that hits home. This dish share a resemblance to the Samoa's beef stew, so our Samoa's sister and brothers always said it hits home.
We use Wagyu Briskets and Shanks, cut into big chunks before stewing it in a deep pot to create flavor and faster cooking.
Prior to cooking the meat we roast the lemon grass and ginger and sauté them. After that we add the cut meat into the pot and add a tiny bit of water.
We add various herbs and spices and top it off with carrots. We finalized it with a salt.
