Beef Stew – Bo Kho: How We Make It

Redbo’s beef stew—bo kho—is one of those dishes that feels like home. This dish resembles Samoan beef stew, so our Samoan sisters and brothers always say it feels like home.

We use Wagyu brisket and shank, cut into large chunks before stewing them in a deep pot for enhanced flavor and quicker cooking.

Prior to cooking the meat, we roast and sauté the lemongrass and ginger. We then add the cut meat to the pot with a small amount of water.

We add various herbs and spices, then top it off with carrots. We finish with a touch of salt.
