Pho Brisket – Pho Chin Nam in Garden Grove, CA: How Pho REDBO Puts It Together

Pho Brisket, or Pho Chin Nam, is one of our favorite dishes. It tastes delicious and provides a depth of flavor and texture. Redbo’s Pho Brisket begins with a prime piece of Wagyu brisket. This Wagyu brisket is high in fat (oleic acid) content because it comes from fully matured cattle. The following are the ten steps we use to prepare our brisket bowl:

  1. We cook our brisket for just two and a half hours.
  2. It is cooled before being sliced.
  3. The broth is brought to a boil, over 200 degrees.
  4. The bowl is heated to over 175 degrees.
  5. Noodles receive a quick dip in hot water.
  6. The noodles are placed in the freshly heated bowl.
  7. Brisket slices are layered on top of the noodles.
  8. Boiling broth is poured into the bowl.
  9. Chopped cilantro, onions, and scallions are added.
  10. A final touch of black pepper is added, then served.
