Bo Luc Lac – shaking beef – is a Vietnamese classic that deserves more recognition than it gets outside the community. The name comes from the wok technique: beef cubes tossed at high heat, developing a crust on all six faces while the interior stays medium-rare. At Pho REDBO Garden Grove, the beef is Wagyu.

Wagyu’s higher intramuscular fat means the cubes stay moist at high wok temperatures where standard sirloin would dry out and tighten. The fat buffer allows a proper sear crust to form on every surface while the interior stays tender. This is the dish ordered alongside the pho by regulars who know the menu.

The preparation: garlic and white onion go into the wok after the initial sear so they cook in rendered Wagyu fat. Fresh scallion added off the heat stays bright. Served over white rice – the Wagyu fat pools into the rice and is one of the quietly best things on the menu.
